There’s something wonderfully satisfying about making pasta from scratch — mixing, kneading, rolling, shaping and finally sitting down to eat what you’ve made.
This is a relaxed, hands-on workshop where you’ll learn the basic techniques for making fresh pasta and then put them into practice. Using our pasta and lasagna machines, ravioli moulds and cutters, we’ll work through the process from dough to plate. What you’ll learn
Making the pasta dough — choosing ingredients, getting the right consistency and learning how to knead and rest the dough.
Rolling the dough — using a hand-cranked pasta machine to roll pasta to the right thickness for different dishes.
Making pasta shapes — cutting and shaping fresh pasta, including tagliatelle and other simple shapes.
Making ravioli — preparing the filling, using ravioli moulds and sets, sealing the pasta and getting that satisfying little parcel just right.
Cooking fresh pasta — how fresh pasta differs from dried pasta, cooking times and a few useful tricks for getting it right.
Sauces and finishing — making simple sauces and learning how to match them with different types of pasta.
Then comes the best part: we cook and eat what we’ve made, sharing a relaxed meal together.
No previous experience is needed. The workshop is about learning by doing, so expect to get your hands messy, make a few imperfect shapes and have fun along the way.
A hands-on pasta-making experience at Himalayan Orchard, with lunch, conversation and, naturally, plenty of pasta.
